Winter Fruit Bread

Slice of baked fruit bread with powdered sugar on a white plate, garnished with dried apricots, cranberries, and walnuts.

Ingredients

  • 1 1/2 cup flour, all purpose
  • 3/4 cup sugar
  • 3 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 eggs, large (beaten)
  • 1/4 cup butter, softened (1/2 stick)
  • 1/2 teaspoon nutmeg
  • 3/4 teaspoon cinnamon
  • 1 cup chopped nuts
  • 1 cup banana, mashed (or applesauce)
  • 1/2 cup chopped nuts
  • 1 cup rehydrated dried, mixed tropical fruit (See instructions)
Yield: 1 Loaf
Prep Time: 55 minutes
Cook Time: 55 minutes

Instructions

Blend sugar, eggs and butter. Add banana or applesauce. Mix with other blended dry ingredients and add nuts and fruit. Pour into greased and floured (or sprayed with cooking spray) loaf pan. Let sit for 20 minutes. Bake at 350° for 45 to 55 minutes. *

To rehydrate dried tropical fruit, soak in 2 cups boiled water in bowl for 15 to 20 minutes. Drain; add to batter.
