Vegetable Soup

Vegetable soup with beef chunks, potatoes, carrots, and corn in a white bowl.

Ingredients

  • 2 package short ribs or beef
  • 2 can consomme
  • 6 potatoes
  • 6 onions
  • 6 carrots
  • 8 celery stalks
  • 1 can yellow corn
  • 1 can tomato sauce (large)
  • 3 can tomatoes (quartered)
  • 1 package frozen mixed vegetables (large)
  • 1 clove garlic (chopped)
  • 3 tablespoon Worcestershire sauce
  • 3 tablespoon sugar
  • Salt and pepper
Yield: 6 Servings
Prep Time: 20 minutes
Cook Time: 4 hours

Instructions

Place all ingredients in a deep kettle. Simmer for 4 hours, adding water as necessary. Chill overnight. Skim off grease. Remove bone, cut meat into bite-size pieces and return meat to soup.
