Tortellini & Kidney Bean Salad

Tortellini salad with kidney beans, cucumber, and red onion in a white bowl.

Ingredients

  • 1 package fresh cheese tortellini
  • 1/2 teaspoon sugar
  • 1/2 teaspoon dried Italian herb seasoning
  • 1/8 teaspoon pepper
  • 3 tablespoon balsamic or cider vinegar
  • 3 tablespoon olive oil
  • 1/3 cup red onion (chopped)
  • 1 can kidney beans (15 1/2-oz can, rinsed and drained)
  • 1 cucumber (quartered and sliced)
  • 2 tablespoon fresh parsley (chopped)
Yield: 4 Servings
Prep Time: 20 minutes
Cook Time: 15 minutes

Instructions

Cook tortellini according to package directions. Rinse with cold water and drain. In a large bowl, mix together sugar, Italian herb seasoning, pepper, vinegar and olive oil. Add tortellini, onion, kidney beans, cucumber and parsley. Toss to coat. Cover and refrigerate at least 2 hours.
