Strawberry-Lemon Freeze

Ingredients

  • 1/4 cup brown sugar
  • 1 1/2 cup chopped pecans
  • 1 cup flour
  • 1/2 cup melted butter
  • 2 egg whites
  • 1 cup sugar (2/3 c. if frozen strawberries are used)
  • 2 cup sliced fresh strawberries OR 1 (16 oz.) pk. frozen strawberries
  • 1 tablespoon lemon juice
  • 1 cup whipped cream (Cool Whip can be used)
Yield: 12 Servings
Prep Time: 8 hours
Cook Time: 20 minutes

Instructions

Mix together brown sugar, pecans, flour, and melted butter, and spread in a 9 x 13-inch pan. Bake at 350° for 20 minutes. Stir 3 times while baking. Let cool. Take out 1/2 of mixture and set aside. Top: Combine egg whites, sugar, strawberries and lemon juice, and beat at high speed until peaks form. Fold in whipped cream. Spoon mixture into a 9 x 13-inch pan in which half of crumb mixture has been spread evenly on bottom. Sprinkle remaining crumb mixture on top. Freeze overnight.
