Spanish Chicken

Braised chicken thighs with carrots, peppers, and herbs in a white serving dish.

Ingredients

  • chicken pieces (seasoned flour)
  • 1/4 cup oil
  • 1/4 cup onion (chopped)
  • 3 tablespoon pepper (chopped)
  • 1 clove garlic (minced)
  • 1/2 cup carrots (chopped)
  • 1/2 cup celery (chopped)
  • 1 cup tomatoes (chopped, peeled, seeded)
  • 3/4 cup tomato juice
Yield: 2 Servings
Prep Time: 20 minutes
Cook Time: 1 hour

Instructions

Dredge chicken in flour; heat in oil in skillet. Brown chicken. Place in a casserole. Sauté the onion, pepper and garlic in the oil in the skillet. Add carrots, celery, tomatoes and tomato juice. Add to the chicken in the casserole. Bake in a 350° oven for 45 minutes.
