Southwest Soup

Southwest soup in white bowl, topped with shredded cheese, tortilla strips, and cilantro.

Ingredients

  • 6 cup chicken broth
  • 1 onion (small, chopped)
  • 2 clove garlic
  • 1 can green chilies (4-oz. can, chopped)
  • 2 can diced tomatoes (14-oz. cans)
  • 1 1/2 cup chicken (cooked, cubed)
  • 1 teaspoon sugar
  • 1/2 teaspoon cumin
  • 3 tablespoon parsley
  • juice of 2 limes
Yield: 8 Servings
Prep Time: 10 minutes
Cook Time: 30 minutes

Instructions

Add all ingredients and simmer 1/2 hour. Ladle soup over shredded Monterey Jack cheese and tortilla chips in large soup bowls.
