Sauce Sabayon (for Soufflè Chocolate)

Smooth, light yellow sabayon sauce in a white bowl, topped with cocoa powder and a single raspberry.

Ingredients

  • 4 egg yolks
  • 1/4 pound sugar
  • 6 ounce Marsala
  • 1 tablespoon cognac or another appropriate liqueur
Yield: 6 Servings
Prep Time: 30 minutes
Cook Time: 10 minutes

Instructions

Beat egg yolks and sugar until frothy in the top of a double saucepan. Add Marsala and place over hot water, stirring constantly until thick and foamy. Stir in the liqueur.
