In 9-inch glass pie plate, microwave butter on high 35 seconds to 1 minute, or until melted. Stir in brown sugar, cinnamon, lemon juice and 1/4 cup brandy. Stir in apples and coat well. Cover with waxed paper. Microwave on high for 6 to 7 minutes, until apples are tender. Serve warm over ice cream.
To make cinnamon ice cream, soften vanilla ice cream and fold in 2 teaspoons or more cinnamon. Mix. Refreeze 1 hour.
