Pumpkin Ice Cream Squares

Pumpkin ice cream squares with graham cracker crust, topped with whipped cream and pecan halves on a white plate.

Ingredients

  • 1/2 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/4 cup melted butter
  • 1 can pumpkin (16 oz.)
  • 1/2 cup brown sugar
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ginger
  • 1/8 teaspoon cloves
  • 1 us liquid quart vanilla ice cream
Yield: 12 Servings
Prep Time: 6 hours

Instructions

Mix crumbs with sugar and butter. Press into the bottom of a 9-inch square pan. Combine pumpkin with sugar, salt and spices. Fold in ice cream. Pour into crumb-lined pan. Cover and freeze. Cut into squares 20 minutes before serving. Garnish with whipped cream and chipped pecans.
