The phyllo dough needs to be at room temperature before the preparation of the pizza. Melt the butter in a bowl. Lightly brush butter on the bottom of a large cookie sheet that has a slight lip. Place a sheet of phyllo dough on the bottom of the cookie sheet, brush the dough with butter and sprinkle it with Parmesan cheese. Repeat the layering of dough, butter and cheese 7 times. On the top layer of phyllo dough, sprinkle all of the mozzarella cheese. Slice the tomatoes, onions and peppers. Place vegetables in row on top of the mozzarella cheese. Sprinkle Parmesan cheese, thyme and oregano on top of the vegetables. Bake the pizza for 60 minutes in a preheated oven at 350°. Salt and pepper may be added on top of the pizza after it is baked. Slice and serve while it is hot.
