Peach-Glazed Pork Chops

Peach-glazed pork chops baked on a bed of stuffing in a white casserole dish, garnished with thyme.

Ingredients

  • 1 8.5 oz. can peach slices (undrained)
  • 1/4 cup margarine or butter (cut into pieces)
  • 1 6 oz. package savory herb stuffing mix
  • 6 pork chops (1/2 inch thick)
  • 1/3 cup peach or apricot preserves
  • 1 tablespoon Dijon mustard
Yield: 6 Servings
Prep Time: 10 minutes
Cook Time: 40 minutes

Instructions

Preheat oven to 375 degrees.

Drain peaches, reserving liquid. Add hot water to syrup to measure 1 1/2 cups. Mix syrup mixture and butter in a large bowl until butter is melted. Stir in contents of stuffing mix package and peaches. Let stand 5 minutes. Spoon stuffing mixture in 9 x 13 pan, arrange chops over mixture. Mix preserves and mustard; spoon over chops. Bake for 40 minutes.
