Mix together the first 4 ingredients listed above, then add the peaches. Pour into an 8 x 8-inch dish and slice one package refrigerated sugar cookie dough, 1/4 inch thick and lay on top. Bake at 350° for 50 to 60 minutes, or until the dough is golden brown. Cool and serve with ice cream.
