Meatball Casserole

Meatball casserole in a blue dish, with pasta, onions, and green beans in tomato sauce.

Ingredients

  • 1 pound ground beef
  • 2 cup green beans (drained, cooked, 2 cans)
  • 1 egg
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoon hot fat
  • 1/4 cup onion (minced)
  • 1 can tomato sauce (8-oz.)
  • 1 cup onion (thinly sliced)
  • 1/2 teaspoon salt
  • 1 can kidney beans (and liquid)
  • Stir-N-Roll egg pastry topping
Yield: 6 Servings
Prep Time: 20 minutes
Cook Time: 45 minutes

Instructions

Heat oven to 425°. Mix ground beef, minced onions, egg, salt and pepper. Shape into 12 balls. Roll in flour, brown in hot fat. Remove meatballs. Add kidney beans, green beans, tomato sauce, sliced onions, salt to drippings. Mix well. Bring to boil. Pour into 2-quart casserole, put meatballs on top. Lay pastry topping over, peel off paper. Flute edge. Make small slits around meatballs. Bake 30 to 35 minutes. Serves 6 to 8.
