Hummus Bi Tahini

Hummus topped with oil and scallions, served with pita bread, celery sticks, and olives on a white plate.

Ingredients

  • 1 can chickpeas, drained (14 oz.)
  • Juice of 3 lemons
  • 1/2 cup tahini
  • 4 tablespoon olive oil
  • 4 clove garlic
  • 3/4 teaspoon salt
  • 3/4 teaspoon allspice
  • 1 teaspoon paprika
  • 1/4 teaspoon cumin
  • 6 scallions (white parts)
Yield: 4 Servings
Prep Time: 15 minutes

Instructions

Mix all ingredients in blender or food processor. If you like very smooth and creamy hummus, peel the chickpeas beforehand. Serve with pita slices, cucumbers and black olives.
