Danish Holiday Fruit Soup

Deep red fruit soup with plums, pears, and cinnamon sticks in a white bowl. Glass of soup behind.

Ingredients

  • 2 us liquid quart boiling water
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1 cup dried prunes
  • 1/2 cup seedless raisins
  • 1 cup fruit juices (1/3 c orange juice, 1/3 c lemon juice, 1/3 c grape or cherry juice)
  • 1 tablespoon vinegar (or 2 T sweet pickle juice)
  • 2 cinnamon sticks
  • 1/2 cup Minute Tapioca or sago
Yield: 8 Servings
Prep Time: 5 minutes
Cook Time: 2 hours 20 minutes

Instructions

Bring water to boil. Add sugar and salt. Stir, with wooden spoon, to dissolve sugar and salt. Stir until water boils again. Add fruit, fruit juices, vinegar and cinnamon sticks. Simmer until prunes are almost soft. Add tapioca or sago. Cook until white of tapioca disappears (about 1 hour). Serve chilled. Makes 8 to 12 servings.
