Creamy Strawberry Spread

Ingredients
- 6 ounce strawberries, fresh (or unsweetened frozen strawberries, thawed)
- 3 tablespoon sugar, superfine (or confectioners' sugar)
- 2 teaspoon lemon juice
- 1 teaspoon lemon zest (grated)
- 1 package cream cheese (3 oz., softened to room temp.)
Yield: 1 Cups
Prep Time: 15 minutes
Instructions
In a small bowl, mash the strawberries with a fork. Stir in sugar to taste and the lemon juice and zest; set aside. In another small bowl, beat the cream cheese until soft and smooth. Add the strawberry mixture and stir until combined. Cover the bowl and refrigerate until needed. Makes about 1 cup.
