Cranberry Pudding

Stacked cranberry puddings with glaze on a white plate, garnished with fresh cranberries.

Ingredients

  • 1/4 pound butter (plus 1 1/2 T., divided)
  • 1 1/2 cup sugar (divided)
  • 3/4 cup evaporated milk ( divided into 1/2 and 1/4 cup)
  • 1/4 cup water
  • 1 cup flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla
Yield: 12 Servings
Prep Time: 30 minutes
Cook Time: 40 minutes

Instructions

Cream 1 1/2 tablespoons butter, 1 cup sugar and 1/4 cup evaporated milk. Add water. Combine flour, baking powder and salt then fold into batter. Add cranberries. Bake in greased muffin tins at 350° for 35 minutes.

Sauce: Cook slightly 1/4 lb. butter, 1 cup sugar, and 1/2 cup evaporated milk and 1/2 tsp. vanilla. Serve over muffins.
