Chocolate Eclair

Golden eclair with smooth chocolate glaze, served on a white plate with chocolate drizzle.

Ingredients

  • 2 package instant French vanilla pudding
  • 1 package Cool Whip (10 oz.)
  • Whole graham crackers
  • 2 unsweetened chocolate squares
  • 1 teaspoon vanilla
  • 1 tablespoon corn syrup
  • 3 tablespoon milk
  • 3 tablespoon margarine (melted)
  • 1 1/2 cup powdered sugar
Yield: 16 Servings
Prep Time: 48 hours 30 minutes

Instructions

Butter bottom of a 9 x 13-inch pan. Cover with whole graham crackers. Prepare pudding per directions. Add Cool Whip. Pour 1/2 mixture over crackers. Add another layer of whole crackers, then the other 1/2 mixture. Add another layer of crackers. 

Icing: Combine chocolate, vanilla, corn syrup, milk, and margarine. Add powdered sugar. Beat until smooth. Refrigerate, uncovered, 2 days (important). 

Serves 12 to 16.
