Chicken & Spinach with Goat Cheese

Chicken and spinach with goat cheese served over white rice on a white plate.

Ingredients

  • 1 chicken breast (cooked, cubed)
  • 1 onion (chopped)
  • 3 clove garlic (or more to taste, chopped)
  • 1 bunch spinach (fresh, washed and chopped)
  • 1 package goat cheese (small pk, plain or herb)
  • pepper (to taste)
Yield: 2 Servings
Prep Time: 25 minutes
Cook Time: 25 minutes

Instructions

Sauté onion in small amount of olive oil. Add garlic; sauté but take care not to burn it. Add cubed chicken. Gradually add chopped spinach. If desired, drain off excess fluid. Add from 1/2 to all the goat's cheese. This is rich and salty, so add this to your taste. As the cheese melts, lightly pepper. Place this topping over baked potato or rice.
