Sauté onion in small amount of olive oil. Add garlic; sauté but take care not to burn it. Add cubed chicken. Gradually add chopped spinach. If desired, drain off excess fluid. Add from 1/2 to all the goat's cheese. This is rich and salty, so add this to your taste. As the cheese melts, lightly pepper. Place this topping over baked potato or rice.
