Chicken Divan Soup

Chicken Divan Soup: Creamy soup with chicken, broccoli, carrots, mushrooms, and rice on a blue-patterned plate.

Ingredients

  • vegetable cooking spray
  • 1 1/4 pound skinned boned chicken breasts (cut into bite-size pieces)
  • 3/4 cup onion (chopped)
  • 2 clove garlic (minced)
  • 1 cup cooked long-grain rice
  • 1/4 teaspoon pepper
  • 1/4 teaspoon salt
  • 2 can sliced mushrooms (4-oz, drained)
  • 1 package frozen chopped broccoli (16-oz, thawed)
  • 1 can chicken broth (14 1/2-oz)
  • 1 can evaporated skim milk (12-oz)
  • 1 can cream of chicken soup (10 3/4-oz, reduced-fat reduced-sodium, undiluted)
Yield: 6 Servings
Prep Time: 20 minutes
Cook Time: 40 minutes

Instructions

Coat a Dutch oven with cooking spray; place over medium-high heat until hot. Add chicken, onion and garlic and sauté until onion is tender. Add rice and remaining ingredients, stirring well. Bring to a boil. Cover, reduce heat and simmer 15 minutes. Yield: 6 (1 1/2-cup) servings. Delicious!
