Chicken Bombay

Chicken Bombay: Braised chicken pieces in tomato sauce with peppers, garnished with sliced almonds and parsley.

Ingredients

  • 1 fryer (about 3-lb, cut up)
  • 1/4 cup flour
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 tablespoon butter
  • 1/3 cup onion (diced)
  • 1/3 cup green pepper (diced)
  • 1 clove garlic (minced)
  • 1 1/2 teaspoon curry powder
  • 1/2 teaspoon thyme
  • 2 cup stewed tomatoes
  • Blanched toasted almonds
Yield: 4 Servings
Prep Time: 20 minutes
Cook Time: 45 minutes

Instructions

Mix flour with salt and pepper. Dredge chicken pieces in seasoned flour. Heat butter and brown chicken on all sides. Remove the chicken. Add the onion, pepper, garlic, curry powder and thyme. Cook briefly, stirring. Add tomatoes with liquid from the can. Return the chicken, skin side up. Cover and cook until tender. Serve with almonds.
