Crust: Crumb crackers in blender. Add salt and cinnamon and mix well. Add melted butter or margarine and blend. Press crumbs firmly into 9-inch pie plate. Chill in refrigerator while preparing filling.
Filling: Mix milk, eggs, cottage-cheese, lemon juice, vanilla, sugar, flour and lemon rind in blender until smooth. Pour into crumb crust and bake at 325° (slow oven) for 60 minutes, or until firm. Cool thoroughly before serving. May serve with strawberries or cherries on top.
