Layer cheese on half of each tortilla. Season with salt and pepper. Fold over the empty half of the tortilla to enclose filling. Place on a baking sheet. Coat tortillas with cooking spray. Broil about 5 inches from the broiler heat for 1 minute. Turn over, coat with spray, broil for an additional minute. Makes 4 servings.
