Carrot Cake I

Slice of moist carrot cake with cream cheese frosting and chopped nuts on a white plate.

Ingredients

  • 2 cup sifted flour
  • 2 cup sugar
  • 2 teaspoon cinnamon
  • 2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cup cooking oil
  • 4 eggs
  • 3 cup grated carrots
  • 1 package cream cheese (8 oz.)
  • 1 package powdered sugar
  • 1 stick butter
  • 1 teaspoon vanilla
  • 1 1/2 cup chopped nuts
Yield: 24 Servings
Prep Time: 30 minutes
Cook Time: 1 hour

Instructions

Mix together flour, sugar, cinnamon, baking soda and salt. Add oil and eggs. Beat at high speed. Fold in grated carrots. Bake at 350° for 1 hour.

For the Icing: Mix together cream cheese, powdered sugar, butter, and vanilla.

Sprinkle chopped nuts on top.
