Strawberry Brunch Loaf

Sliced strawberry loaf cake on a plate, topped with sliced almonds and powdered sugar, served with fresh strawberries.

Ingredients

  • 2 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 teaspoon lemon peel (grated)
  • 1/2 teaspoon nutmeg
  • 2 eggs (beaten)
  • 1/2 cup honey
  • 1/4 cup oil
  • 1 1/2 cup coarsely chopped strawberries (fresh or unsweetened, frozen)
  • 1/2 cup slivered almonds (opt.)
Yield: 1 Loaf
Prep Time: 15 minutes
Cook Time: 50 minutes

Instructions

Stir together dry ingredients. Combine eggs, honey and oil. Stir in strawberries and almonds. Add liquid all at once to flour mixture, stirring only until flour is moistened. Pour into greased 81/2 x 4 1/2-inch loaf pan. Bake in preheated 350 degree oven for 50 to 55 minutes. Cool 15 minutes before removing from pan. Cool completely before slicing.
