Spanish Rice

Spanish rice on a plate, topped with bacon and green peppers.

Ingredients

  • 8 slice bacon
  • 1 onion (chopped)
  • 1 green pepper (chopped)
  • 1 cup rice (uncooked)
  • 1 can tomatoes (large, diced)
  • 1/2 cup tomato juice (up to 1 c)
  • 1 1/2 teaspoon salt
  • 1/8 teaspoon pepper
Yield: 4 Servings
Prep Time: 15 minutes
Cook Time: 30 minutes

Instructions

In a skillet, fry bacon until crisp; remove from skillet. Add onion and green pepper to the bacon fat and cook over medium heat until onion is yellow. Add remaining ingredients and cook until liquid is absorbed and rice is tender. Crumble bacon into rice.
