Roast Salmon with Caper Sauce

Roasted salmon topped with caper sauce and herb crust, garnished with parsley.

Ingredients

  • 3 tablespoon margarine or butter
  • 1/3 cup plain dried bread crumbs
  • 1/4 cup loosely packed fresh parsley leaves, minced
  • 3 tablespoon capers, drained and minced
  • 1 teaspoon dried tarragon, crumbled
  • 2 teaspoon salt
  • 1/4 teaspoon black pepper, coarsely ground
  • 2 pound whole salmon filet
  • 3/4 cup sour cream
  • 1/2 cup mayonnaise
  • 1/4 cup milk
  • 3 tablespoon capers, drained and chopped
Yield: 4 Servings
Prep Time: 10 minutes
Cook Time: 30 minutes

Instructions

Preheat oven to 350 º. Melt margarine or butter; combine with bread crumbs, parsley, minced capers, tarragon, salt and pepper. Place salmon in baking dish, cover with margarine mixture and bake for 30 minutes.

Make caper sauce by mixing sour cream, mayonnaise, milk and chopped capers. Spoon over salmon.
