Orange Iced Carrot Cake

Ingredients
- 1 cup mashed cooked carrots (about 4 med. )
- 3/4 cup sugar
- 1 cup shortening
- 2 eggs
- 2 cup all-purpose flour
- 2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cup powdered sugar
- 1/6 cup softened butter
- 1 tablespoon orange juice (can use up to 2 T.)
- 1 teaspoon grated orange peel (opt.)
Yield: 36 Cookies
Prep Time: 30 minutes
Cook Time: 10 minutes
Instructions
Mix carrots, sugar, shortening and eggs. (Use electric mixer.) Sift dry ingredients together. Stir dry ingredients into carrot, sugar, shortening and egg mixture. Bake 2 inches apart on ungreased cookie sheets about 8 to 10 minutes.
Frost with orange butter frosting made from powdered sugar, butter, orange juice and grated orange peel if desired.
