Marenda’s Cherry Pudding

Baked cherry pudding in white dish, topped with powdered sugar and a mint sprig.

Ingredients

  • 1 cup flour
  • 1/2 cup sugar (plus 2/3 cup)
  • 1/2 teaspoon salt
  • 2 teaspoon baking powder
  • 1/2 cup milk
  • 1/4 cup butter (or the size of an egg; I use 3 T)
  • 1 teaspoon vanilla
  • 1 cup tart cherries ( or 1 16-oz. can drained, reserving the juice)
  • 1 cup cherry juice and water (add enough water to the juice to make 1 cup.)
Yield: 12 Servings
Prep Time: 30 minutes
Cook Time: 30 minutes

Instructions

Mix together flour, sugar, salt, baking powder, milk, butter, and vanilla. Pour this batter into a buttered 1 1/2- to 2-quart baking dish. In same bowl, mix together cherries, 1 cup cherry juice and water mixture, and 2/3 cup sugar. Pour cherry mixture over the batter. Bake at 350° for 25 to 30 minutes. The cherries, in a syrup, will be on the bottom. Serve warm with whipped cream, if desired.
