High Fiber Muffins

Baked high-fiber muffins in paper liners on a white plate, topped with oats and seeds.

Ingredients

  • 1 cup rice apple fiber
  • 3/4 cup whole-wheat flour
  • 3/4 teaspoon salt
  • 1/4 cup brown sugar
  • 1/2 teaspoon baking soda
  • 3/4 cup buttermilk
  • 1 egg
  • 1/4 cup vegetable oil
  • 1/4 cup raisins and sunflower seeds (optional)
Yield: 12 Muffins
Prep Time: 15 minutes
Cook Time: 20 minutes

Instructions

Mix all ingredients. If desired, add raisins and sunflower seed. Fill buttered muffin pan 2/3 full. Bake at 425° for 20 minutes. Makes about 12 muffins.
