Glazed Fresh Strawberry Pie

Glazed strawberry pie with a golden, fluted crust, filled with bright red strawberries in a clear, shiny glaze.

Ingredients

  • 1 us liquid quart strawberries (washed, drained and hulled)
  • 1 1/3 cup sugar
  • 1/2 cup water
  • 1/4 cup cornstarch
  • 3/4 cup cold water
  • 1/8 teaspoon salt
  • 1 tablespoon lemon juice
  • red food coloring
  • 1 baked pastry shell
Yield: 24 Servings
Prep Time: 30 minutes
Cook Time: 10 minutes

Instructions

Bring sugar and 1/2 cup water to boiling point in unit over medium heat. Dissolve cornstarch in 3/4 cup cold water. Add to syrup mixture. Cook about 10 minutes over low heat, or until clear. Stir occasionally. Blend in salt, lemon juice and enough vegetable coloring to produce a red shade. Pour over strawberries; mix gently. When cool, place in baked pie shell. Garnish with whipped cream.
