Blueberry Casserole Bread

Ingredients

  • 2 cup all-purpose flour (sifted)
  • 1 cup sugar
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon orange rind (grated)
  • 1 cup grated sharp cheddar cheese
  • 1 cup blueberries (fresh or frozen dry pack)
  • 3/4 cup orange juice
  • 2 tablespoon shortening
  • 1 egg
Yield: 4 Servings
Prep Time: 15 minutes
Cook Time: 55 minutes

Instructions

Combine flour, sugar, baking powder, baking soda, salt, orange rind, cheese and blueberries. Add orange juice, shortening and egg. Beat until smooth. Pour into well-greased 1 1/2-quart casserole. Bake in preheated oven at 350° for 55 to 65 minutes, or until bread feels firm to the touch, or pour into muffin tins and bake accordingly.
