Zucchini Casserole

Baked zucchini casserole in white dish, topped with golden-brown breadcrumbs and thyme sprigs.

Ingredients

  • 2 eggs
  • 1/4 cup cream or milk
  • 1 small onion, grated (small! )
  • 1/4 teaspoon salt
  • dash pepper
  • 1/3 teaspoon oregano
  • 1/2 cup soda crackers, crushed
  • 1 pound zucchini, sliced
Yield: 6 Servings
Prep Time: 15 minutes
Cook Time: 1 hour

Instructions

Preheat oven to 350º. Mix all ingredients in order except for zucchini. Add sliced zucchini and place in baking dish. Bake uncovered for first 10 minutes, then cover and bake 50 minutes.

Variation: Add 1/6 tsp. basil or 1/6 tsp. marjoram.
