Mix oil and sugar together; add eggs and 2 teaspoons vanilla. Add the dry ingredients and the zucchini. Add raisins and nuts last. Blend well. Bake at 350° for 50 minutes in a 13 x 9 x 2-inch baking pan. You may substitute grated carrots instead of zucchini.
For Cream Cheese Frosting: Cream together the cream cheese and butter, then add powdered sugar and 1 teaspoon vanilla.
