Whole Wheat Muffins

Whole wheat muffins in paper liners on a white plate, scattered with fresh blueberries.

Ingredients

  • 1/2 cup Splenda
  • 1 2/3 cup whole-wheat flour
  • 1/3 cup ground flax meal
  • 3 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 egg (beaten)
  • 2 tablespoon applesauce, unsweetened
  • 2 cup skim milk
  • 1 teaspoon vanilla
  • blueberries (or fruit of choice)
Yield: 12 Muffins
Prep Time: 15 minutes
Cook Time: 15 minutes

Instructions

Preheat oven to 400°. Mix Splenda, flour, flax meal, baking powder and cinnamon in bowl. Add egg, applesauce, milk and vanilla. If desired, add blueberries or fruit of your choice. Bake 15 minutes. Remove from pan and cool on a rack.
