Strawberry-Oatmeal Loaf

Sliced strawberry-oatmeal loaf on a plate, topped with fresh strawberries and oat crumble.

Ingredients

  • 3/4 cup sugar
  • 1/3 cup butter
  • 2 eggs (beaten)
  • 1/4 cup milk
  • 1 cup strawberries (mashed and drained)
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon rind (grated)
  • 2 cup whole-wheat flour (sifted)
  • 3 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup quick rolled oats
  • 1/2 cup nuts (chopped)
  • 1/4 cup raisins
Yield: 1 Loaf
Prep Time: 20 minutes
Cook Time: 40 minutes

Instructions

Cream sugar and butter. Stir in eggs, milk, strawberries, lemon juice and rind. In separate bowl, sift together flour, baking powder and salt. Stir in oats. Add flour-oats mixture to milk-strawberry mixture gradually, stirring well after each addition. When thoroughly mixed, fold in nuts and raisins. Pour into greased and floured loaf pan and bake in 350 degree oven for 40 to 50 minutes. Delicious toasted!
