Spinach Lasagna

Layered spinach lasagna with melted cheese, red sauce, and parsley garnish on a white plate.

Ingredients

  • 1 pound ricotta cheese ( or small curd cottage cheese)
  • 1 1/2 cup mozzarella cheese (shredded, divided)
  • 1 egg
  • 1 package frozen chopped spinach (10-oz, thawed and drained)
  • 1 teaspoon salt
  • 3/4 teaspoon oregano
  • 1/8 teaspoon pepper
  • 2 package spaghetti sauce (15 1 /2-oz jars)
  • 1/2 package lasagna noodles (8 oz, I use whole-wheat noodles)
  • 1 cup water
Yield: 8 Servings
Prep Time: 20 minutes
Cook Time: 15 minutes

Instructions

In a large bowl, mix ricotta, 1 cup mozzarella, the egg, spinach, salt, oregano and pepper. In greased 13 x 9 x 2-inch baking dish, layer 1/2 cup sauce, third of noodles and half the cheese mixture. Repeat. Top with remaining 1/2 cup mozzarella. Pour water around edges. Cover tightly with foil. Bake in 350° oven 15 minutes, or until bubbly. Let stand 15 minutes before serving. Makes 8 servings. (This recipe eliminates one step. No need to cook noodles ahead.)
