Saucy Carrot Salad

Sliced carrots and zucchini with green beans, tossed in sauce and garnished with chopped scallions on a white plate.

Ingredients

  • 5 cup carrots (up to 6 c, sliced, 2 lbs whole)
  • 1 teaspoon salt
  • 1 cup green onions (chopped)
  • 1 cup green pepper (chopped)
  • 1 can tomato soup (10-oz)
  • 1 cup sugar
  • 1 teaspoon pepper
  • 1/2 cup vinegar
  • 1 teaspoon Worcestershire sauce
  • 1/2 cup salad oil
Yield: 10 Servings
Prep Time: 30 minutes
Cook Time: 20 minutes

Instructions

Scrape carrots. Cook whole 20 minutes. Drain and cool. Cut in crosswise slices. Cover with mixture of other ingredients. Cover and refrigerate at least 12 hours prior to serving. Serves at least 10 to 12 people. Keeps well for several days.
