Pineapple & Apricot Salad

Apricot gelatin salad with fruit pieces, topped with whipped cream and shredded cheese.

Ingredients

  • 2 package orange JeIlo
  • 1 can apricots, large
  • 1 can crushed pineapple, no 2
  • 2 cup hot water
  • 1 cup fruit juice
  • 1/2 cup sugar
  • 3 tablespoon flour
  • 1 egg, lightly beaten
  • 2 tablespoon butter
  • 1 package Dream Whip
Yield: 8 Servings
Prep Time: 1 hour 30 minutes
Cook Time: 10 minutes

Instructions

Drain pineapple and keep juice. Cut apricots into small pieces. Dissolve Jello in boiling water. Add 1 c reserved juice. Let set until slightly thickened, then stir in fruit. Pour into pan and cool completely. Cook and stir remaining juice, sugar, flour, egg, and butter on low heat to make topping. Let topping cool. Mix into whipped Dream Whip. Spread over set Jello and top with grated American cheese.
