New Year’s Morning Breakfast

Scrambled eggs with white beans and peas on a plate, served with two forks.

Ingredients

  • 2 tablespoon onion greens (chopped)
  • 1 can bean sprouts (16-oz)
  • 6 eggs
  • 1/8 teaspoon pepper
  • 2 tablespoon butter (or margarine)
  • 1/2 cup water chestnuts (sliced)
  • 1 teaspoon salt
  • 2 teaspoon soy sauce
Yield: 4 Servings
Prep Time: 15 minutes
Cook Time: 30 minutes

Instructions

Cook onion in butter until tender. Rinse and drain bean sprouts. Add bean sprouts and water chestnuts, mixing lightly. Combine eggs, salt, pepper and soy sauce; beat slightly. Pour over bean sprouts and water chestnuts. Cook over low heat, stirring occasionally until eggs are set. Serves 4 to 6.
