Muffins Tropicale

Baked muffins in paper liners, topped with pecans and shredded coconut, served on a white plate.

Ingredients

  • 2 cup all-purpose flour
  • 2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup packed brown sugar
  • 1 egg (beaten well)
  • 1 cup sour cream
  • 1 can crushed pineapple (8 3/4 oz.)
  • 1/2 cup chopped pecans
  • 1/3 cup cooking oil
Yield: 18 Muffins
Prep Time: 30 minutes
Cook Time: 20 minutes

Instructions

Stir together thoroughly the flour, baking powder, baking soda and salt. Add brown sugar. Combine egg and sour cream. Stir in undrained pineapple, nuts and oil. Add to dry ingredients all at once. Stir until moistened. Fill greased muffin pans 2/3 full. Bake at 400° about 20 minutes. Makes 18 muffins.
