Mexican Rice

Baked Mexican rice casserole with melted cheese, beans, peppers, and cilantro garnish.

Ingredients

  • 2 tablespoon oil
  • 1 onion (medium, cut up)
  • 1 green pepper (chopped)
  • 1 pound hamburger
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon basil (dried)
  • 1/2 teaspoon pepper
  • 1 can tomatoes (1-lb. 14-oz, drained)
  • 3 cup rice (cooked)
  • 1 can red kidney beans (drained)
  • 4 slice cheddar cheese (cut in strips)
Yield: 6 Servings
Prep Time: 20 minutes
Cook Time: 1 hour 10 minutes

Instructions

Sauté onion, green pepper and beef. Drain and add paprika, salt, basil and pepper. Cut up tomatoes and add to meat mixture. Simmer, uncovered, 30 minutes. Add cooked rice and beans. Place mixture in casserole. Add strips of cheese on the top. Bake, covered, for 20 minutes in oven at 350 degrees. Uncover and continue baking for 10 minutes.
