Melon Gazpacho Soup

Chilled melon soup in white bowl, topped with diced melon, cucumber, red onion, and basil.

Ingredients

  • 4 cup honeydew melon (diced)
  • 4 cup cantaloupe (diced)
  • 1 cucumber (peeled, seeded and diced)
  • 1 cup red onion (diced)
  • 1 cup celery (diced)
  • 1 red bell pepper (seeded and small diced)
  • 1 yellow pepper (seeded and small diced)
  • 1/2 cup lemon juice
  • 1/4 cup white wine
  • 1/4 cup red wine vinegar
  • 1/4 cup basil (chopped)
Yield: 8 Servings
Prep Time: 30 minutes

Instructions

Mix melons, pureé half of melon mixture. Mix all other ingredients together in the pureéd mixture. Serve cold.
