Meatless Main Dish

Rice dish with zucchini slices, red peppers, meatless protein pieces, and almond slivers on a white plate.

Ingredients

  • 1/2 package brown rice
  • 3 tomatoes (fresh, chopped, canned may also be used)
  • 1/4 pound butter
  • 1 zucchini (medium size)
  • 1 onion (medium size, chopped)
  • 1/2 cup blanched almonds
  • salt (to taste)
Yield: 4 Servings
Prep Time: 15 minutes
Cook Time: 25 minutes

Instructions

Cook brown rice according to package directions. Sauté onion in butter. Add chopped tomatoes and thinly sliced zucchini. Add rice to vegetables and salt to taste. Add almonds.
