Marinated Roast Beef Salad

Sliced roast beef salad with boiled eggs, potatoes, red onion, pickles, and lettuce.

Ingredients

  • 1/2 pound cooked roast beef (cut into strips)
  • 1/4 cup gherkins (chopped)
  • 2 tablespoon onion (chopped)
  • 1 hard-cooked egg (chopped)
  • 1 potato (cooked, peeled and diced)
  • 2 tablespoon beef broth
  • 1 tablespoon olive oil
  • 1 tablespoon vinegar
  • 2 teaspoon Dijon mustard
  • Salt and pepper to taste
Yield: 2 Servings
Prep Time: 20 minutes

Instructions

Place meat, gherkins, onion, egg and potato in a bowl. In another bowl, combine the remaining ingredients. Beat with a wire whisk. Toss into meat mixture. Chill. Serve on lettuce garnished with chopped parsley.
