Italian Quiche

Italian quiche with golden crust, topped with pepperoni, olives, and herbs; slice removed.

Ingredients

  • 1/2 cup pepperoni, diced
  • 4 ounce black olives, sliced
  • 1/2 cup green bell pepper, chopped
  • 1 cup mushrooms, sliced
  • 1 cup mozzarella cheese, shredded
  • 3 green onions, chopped
  • 3 large eggs
  • 1 cup half-and-half
  • 1/4 teaspoon salt
  • 1/4 teaspoon oregano
  • 1 baked pie crust (9-inch)
Yield: 4 Servings
Prep Time: 15 minutes
Cook Time: 30 minutes

Instructions

Preheat oven to 375º. In a bowl, combine pepperoni, olives, green pepper, mushrooms, mozzarella cheese and green onions; mix well. Spread evenly into the 9-inch baked pie crust.

In a bowl combine eggs, half-and-half, salt and oregano; mix well. Pour over the cheese mixture and bake for 30 minutes, or until light brown. Let stand 10 minutes before serving.
