Escalloped Tomato Casserole

Baked tomato casserole in red and white dish, topped with herbs. Golden brown crust.

Ingredients

  • 2 tablespoon butter
  • 1 onion (medium, chopped)
  • 1 tablespoon sugar
  • 1 cup Pepperidge farm stuffing
  • 1 carrot (grated)
  • 1/2 teaspoon dry mustard
  • 1 can tomatoes (large)
  • Salt and pepper
Yield: 4 Servings
Prep Time: 15 minutes
Cook Time: 30 minutes

Instructions

Sauté onion in butter. Then combine with tomatoes (chop them) and rest of ingredients. Put in casserole and sprinkle grated cheese or more stuffing on top. Can be fixed ahead of time. Heat thoroughly before serving. Serves 4 to 5.
