Creamy White Chili

Creamy white chili in a bowl, topped with sour cream, parsley, chicken, and white beans.

Ingredients

  • 1 pound chicken breast (boneless, skinless, cut into 1-inch cubes)
  • 1 onion (medium, chopped)
  • 1 1/2 teaspoon garlic powder
  • 1 tablespoon vegetable oil
  • 2 can Great Northern beans (15 1/2-oz cans, rinsed and drained)
  • 1 can chicken broth (14 1/2-oz)
  • 2 can green chilies (4-oz)
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon pepper
  • 1/4 teaspoon cayenne pepper
  • 1 cup sour cream (8 oz)
  • 1/2 cup whipping cream
Yield: 4 Servings
Prep Time: 20 minutes
Cook Time: 1 hour 5 minutes

Instructions

In a large saucepan, sauté the chicken, onion and garlic powder in oil until the chicken is no longer pink. Add the beans, broth, chilies and seasonings. Bring to a boil. Reduce the heat; simmer, uncovered, for 30 minutes. Remove from the heat; stir in the sour cream and whipping cream. Serve immediately.
