Chocolate Zucchini Cake I

Slice of chocolate zucchini cake with chocolate frosting, cocoa powder dusting, and chocolate chips on a white plate.

Ingredients

  • 1 cup brown sugar ( firmly packed)
  • 1/2 cup granulated sugar
  • 1/2 cup butter or margarine
  • 1/2 cup vegetable oil
  • 3 eggs
  • 1 teaspoon vanilla
  • 1/2 cup buttermilk
  • 2 1/2 cup all-purpose flour
  • 1/2 teaspoon allspice
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon iodized salt
  • 2 teaspoon baking soda
  • 4 tablespoon cocoa
  • 3 zucchini, approx. 6 inches long or about 2 cups (approx. 6 inches long or about 2 cups)
  • 1/2 cup semi-sweet chocolate pieces (can use up to 1 cup)
Yield: 24 Servings
Prep Time: 30 minutes
Cook Time: 45 minutes

Instructions

In a large bowl, cream together the sugars, butter or margarine and oil. Add eggs, vanilla and buttermilk; stir well to mix. Sift together all dry ingredients and then sift into the mixing bowl. Grate the zucchini, skin and all, into the bowl and stir until blended. Pour into a greased and floured 9 x 13-inch baking pan. Sprinkle top with chocolate pieces and bake in a preheated 350° oven for 45 minutes, or until cake tests done. Additional frosting is optional but not necessary.
