Chicken Scampi

Chicken scampi on white plate with rice. Chicken and shrimp in a red sauce, garnished with parsley.

Ingredients

  • 3 pound broiler/fryer (cut up)
  • 1/4 cup margarine
  • 2 onions (medium, sliced)
  • 1 can tomato sauce (15-oz)
  • 1/2 cup Parmesan cheese (grated)
  • 1/4 cup parsley (chopped)
  • 1/2 teaspoon oregano leaves
  • 1/4 teaspoon garlic powder
  • 1 dash Salt and pepper
  • 1 cup shrimp (5 oz, cleaned and cooked)
  • 1/2 cup dry red wine
  • hot cooked rice
Yield: 4 Servings
Prep Time: 20 minutes
Cook Time: 1 hour

Instructions

Brown chicken on both sides in margarine. Drain. Add onion, tomato sauce, cheese, parsley and seasonings. Cover. Simmer 35 to 40 minutes, or until tender. Stir in shrimp and wine. Heat thoroughly. Serve over rice.
